Aside from gout and broken blood vessels, one of the more useful symptoms that you develop as a wine merchant is a mental algorithm that allows you to calculate the ‘price versus quality’ ratio of a wine with a fair degree of speed and accuracy. Bells start to ring as soon as the formula spits out a positive result and this wine did exactly that. Our mental algorithm immediately placed it in the £20+ category, so the campanologists went to work when we learned that we could sell it for £16.95. It’s a Chardonnay from the guys at Wildeberg from a single vineyard in Banghoek, which is wild yeast fermented and partly aged in oak.
You mustn't let Chardonnay dawdle. It needs to be chivvied along like an idle child. Leave it to its own devices and it will stare at the cracks in the pavement or wander off into the nearest sweet shop. Here's an example of good parenting by JD Roussouw, whose coaxing and cajoling has kept this Chardonnay on its toes. The result is delectable, offering up classic citrus, stone fruit and crème fraiche, nutty oak notes, a touch of spice and the flavours are all pulled together by a fine string of acidity, which keeps the wine perky and tangy, and beautifully balanced.
