People tend not to like austerity and too much austerity can lead to public disorder, but austerity in wine, such as you find in this Jura Savagnin (not to be confused with Sauvignon) gives it cut and thrust, and the only riot taking place is on the palate. It’s a little reductive at first, with stony and flinty aromas, more about the chalky soil than the grape. In the mouth it is bone dry and feels traditional, a little rustic even, but with modern cleanliness and finishes with yellow citrus and a salty twist. 13% alc. Drink now-2028.
