This is a very exciting new domaine and, because this is only their 3rd vintage, we actually find ourselves, for once, aboard the bandwagon, rather than chasing it down the road. There's something very 'Raveneau' about this, their Chablis 45° (named after the steep slope of the vineyard), a wine with beautiful line and length, a perfectly balanced structure and subtle layers of orchard fruits, chestnuts, daisies and lightly-salted butter There must have been a time when no one had heard of Dauvissat or Raveneau and this is the time when no one has heard of Clément Lavallée. The bandwagon is picking up speed. Hop on! 12.5% alc. No chemicals or insecticides are used in the vineyards, and Clément is working towards full organic certification.
