We want our wine list to be interesting, but there’s no point in just listing a bunch of wines from weird places and even weirder grape varieties if they aren’t delicious, so we make sure that a wine made from Premsal Blanco in the Mallorcan appellation of Binissalem has a reason to be here. It has a delightful, citrus and bay leaf character to the nose and a zippy, green-fruit palate. The lees see a bit of ‘battonage’ (the posh word for ‘stirring’), which adds some volume to the texture and persistence to the finish. Something to try on its own or with Mediterranean fish dishes (unsurprisingly, given its location). 13% alc. Drink now-2026.
