This is definitely not a quaffer. It’s a wine to swirl in a large glass and sip slowly and contemplatively, like a good whisky. It’s a fairly deep, burnished bronze colour and rich in tannic texture and stone-licking dryness. It’s almost the opposite of a white wine, with the fruit providing the structure and the structure providing the flavour, with smoke, nut skins, toast and salt to the fore with the fruit and flora playing second fiddle, fleshing out the core with dried apricot and preserved lemon. It’s a blend of 50% Malagousia, 25% Assyrtiko, 20% Vidiano and 5% Aidani. The Vidiano and Aidani were fermented in clay amphorae, and all the wines see 5 days of skin contact. 13.5% alc.
