A wonderful, dry Languedoc rosé, made with real integrity by Pierre Bories, who can fairly be accused of doing everything properly. The property has been converted to organic farming and is in conversion to biodynamics with hundreds of trees and hedges planted to help restore biodiversity and a flock of sheep brought in to graze the vineyards. A healthy soil makes for happy grapes and this wine tastes like it has a smile on its face. It’s pleasingly dry, but succulently juicy, and the fruit tastes like it’s on a bouncy castle, bounding gleefully with yellow plum, strawberry and white nectarine. 12.5% alc. 40% Cinsault, 40% Grenache Noir, 20% Grenache Gris. Drink now-2026.
