When you lie on a bed of nails, it only hurts if there’s a protruding nail. The same can be said for a great wine, because it only tastes unbalanced if one of the structural elements (acidity, tannins, dry extract etc.) is out of alignment. Here’s a great example of a wine where all the components are in tune with one another. It’s a delicious blend of Cabernet Sauvignon and Merlot sourced from vineyards that are farmed biodynamically and the fruit tastes plush, vibrant and vital. It’s packed with succulent cassis, damson and blackberries with plum flavours also coming through on the palate. It’s fruity, mineral and savoury all at once, with subtle spice in the background. There’s a classical feel to it, but no austerity, because the fruit is so toothsome and it gives the impression that every berry was buffed by a diamond polisher, while the texture has an almost velvet-like feel with beautifully fine-grained tannins. A class act. Aged for 15 months in a combination of oak barrels and stainless steel. 14% alc. Drink now – 2028.
